Valmoro Rueda Verdejo Barrel fermented
Bright straw yellow color. Intense aroma of lime, pear, pineapple, fennel, green herbs and slightly toasted oak. The taste of ripe white fruit, tropical, fresh acidity, mineral and integrated wood notes. Long persistent full aftertaste, with elegantly balanced acidity.
The bunches are harvested in the early cool morning to ensure the preservation of natural acids and delicate fresh fruit aromas. The peels soak in the must for 24 hours at a controlled temperature of 7°C to promote the transfer of flavor and aroma substances. The must is then pressed and fermented 80% at a controlled temperature in stainless steel tanks. 20% of the must ferments in 225 liter French oak barrels for 18-20 days. To gain structure and complexity, both wines mature for 4 months on the yeast sediment with reassembly of the lees every 14 days. The wines are then combined and bottled after light filtration. The wine then has to develop in the bottle for at least 8 months before it is put on the market.
Perfect with grilled fish, poultry or veal.
