This wine is made from Nero d'Avola, a historic Sicilian grape that has caused the re-emergence of wine production in Sicily.
This grape gives elegance and fruitiness to wine. The grapes grow in the vineyards of Ragusa and Agrigento. Both vineyards are completely different in climate and soil.
The vineyards in eastern Sicily enjoy a warm climate with wide variations in temperature. The light sandy soil produces elegant, refined and very fragrant wines. The grapes that grow in the north-west experience a warm but temperate climate and grow on clay soils, which gives a rich wine with full body.
The grapes are harvested at the end of September, when they are perfectly ripe. Fermentation takes place with selected yeasts for 10 to 12 days at a temperature of 25-27°C, with the must being circulated regularly.
The Nero d'Avola is aged separately in steel tanks to preserve its fruity character, while the rest of the wine is aged in French oak barrels for 8 - 10 months, to soften the tannins and give structure to this elegant wine.
The final step in the process is mixing the wines to achieve the perfect blend. The wine matures for another 12 months, first in steel and then in the bottle.
The wine has an intense red color, deep and concentrated, with light garnet red reflections.
The bouquet is mature, with notes of red berries such as blackberries, raspberries and cherries, which are accompanied by floral notes of violets. The wood aging provides notes of vanilla and tobacco.
A soft and juicy palette with elegant and refined tannins. The wine has an excellent structure and body.
