aromas of fresh lime peel, elderflower, freshly cut grass and sweet pepper, while retaining the characteristic minerality that comes from the Steenberg terroir.
Growing under a cool climate, this Sauvignon has an acidity that keeps it lively and fresh on the palate with aromas of gooseberry and green melon. All elements ensure that it can mature well over the next 2-5 years.
This wine comes from different locations and is harvested at different levels of ripeness. Each location yields unique characteristics ranging from flint to grass, from green pepper to gooseberry but also ripe tropical flavors. The grapes were harvested by machine in the cool, early mornings, starting at 2 a.m., to preserve the delicate flavors. The maceration occurs after 8–24 hours at 10 °C. The juice settles overnight, after which it is crushed clean, inoculated with yeast and undergoes fermentation for up to 30 days at temperatures between 11 °C - 13 °C.
This wine goes well with white meat and fresh fish. It is delicious with dishes with green herbs and that are slightly spicy.

Steenberg is located in the Constantia Valley, which has a cool climate and is the oldest wine region in the New World. Steenberg's vineyards cling to the slopes of Steenberg, which is part of the Table Mountain National Park. On the cool, east-facing slopes, the vines face the morning sun and are protected from the hot afternoon sun by the mountain's shadow. The coolness of the ocean travels only 5 km with the prevailing southeasterly wind in the summer months, keeping humidity low and limiting summer temperatures to just 22 °C.
