Primus
Because only the very best is good enough, Salentein Primus wines are only released in years when the wine is of exceptional quality. Only grapes from small, specially selected plots from the vineyards in the Uco Valley are used.
Vinification
The grapes are fermented in French oak barrels at a temperature no warmer than 20°C. The wine matures for 10 months. Malolactic fermentation also takes place during this period, which converts the sharp malic acid into soft lactic acid. The yeast that settles to the bottom during ripening is stirred into the wine a number of times, this is called 'battonage' and gives the wine more flavor and richness.
Origin
The Grapes for the Primus Chardonnay come from two different vineyards, the 'La Pampa' estate and the 'San Pablo' estate. There is a serious height difference of 250 meters between the two vineyards and this affects the ripening of the grapes. both Estates develop their own aromas and together they form a wine with more depth and complexity.
