This wine is ideally suited for game dishes. Think of hare, pheasant, partridge or quail. But also deer, deer and rabbit. You can also perfectly combine this wine with young cheeses or pâté.

The wine is made under the direction of Bodegas Salentein, the very prestigious wine project of the Dutchman M. Pon started in 1997. Trendsetter in Argentinian wine and ideal for top quality wine.

The Barrel Selection from Salentein is characterized by aging in oak barrels. On the one hand, maturing in wooden barrels gives the wine more structure and flavor, but it also causes the wine to lose its sharp edges. The exception is the Sauvignon Blanc, which is not aged in wood and only has the title 'Selection'.

Vinification

For the Barrel Selection wines, the 'rack and return' technique is used during the fermentation process. The skins are sieved from the wine and mixed with the juice again, so that a good extraction takes place and the flavors from the grape skins end up in the juice. This way, in addition to beautiful wood-aged flavors, you also taste beautiful soft fruit.

Origin

The vineyards are located in Mendoza, in the heart of Alto Valle de Uco, more than 1200 meters above sea level. The soil here consists of coarse rock, which ensures perfect water permeability. The nights are cool due to descending air from the Andes and the days are sunny and warm. This combination of factors benefits the aroma development.
