Barrel Selection
The Barrel Selection from Salentein is characterized by aging in oak barrels. On the one hand, maturing in wooden barrels gives the wine more structure and flavor, but it also causes the wine to lose its sharp edges. The exception is the Sauvignon Blanc, which is not aged in wood and only has the title 'Selection'.
Vinification
For the Barrel Selection wines, the 'rack and return' technique is used during the fermentation process. The skins are sieved from the wine and mixed with the juice again, so that a good extraction takes place and the flavors from the grape skins end up in the juice. This way, in addition to beautiful wood-aged flavors, you also taste beautiful soft fruit. After this technique, the wine matures for another 12 months in oak barrels.
Origin
The El Oasis vineyard is located in Mendoza, Argentina, in the heart of Valle de Uco, more than 1200 meters above sea level. The soil here consists of coarse rock, which ensures perfect water permeability. The nights are cool due to descending air from the Andes and the days are sunny and warm. This combination of factors ensures excellent aroma development.
