Farina is located in the heart of the Valpolicella Classico and is part of Veneto. The Italian family business was founded at the beginning of the nineteenth century.

A beautiful new project from Farina. Appassilento stands for “a passo lento”. Which means something like 'at a slow pace' and 'rest'.

Appassilento is a unique vinification method only used by Farina and is expressed in a practical sense by the extended fermentation process. Up to three times longer than normal winemaking. The result is a wine with depth and a unique concentration of flavors. During the process the temperature never exceeds 20 degrees and so the wine remains fruity and accessible. The word appassilento comes from a passo lento, which means at a slow pace.

The Appassilento Rosso has the Veneto designation as origin. The vines are in the province of Verona, where the soil is of volcanic origin and rich in lime and clay.
