Valdespino Pedro Ximenez El Candado

An intense mahogany color with aromas of dried fruit (raisins and figs) and subtle notes of roasted coffee beans, mocha and sweet licorice. Velvety in taste with a long, silky aftertaste. El Candado' takes its name from the Spanish word for 'padlock'. This used to seal every bottle.

This sweet El Candado is best served with desserts, including dark chocolate pudding or vanilla ice cream. Serve the Sherry at cellar temperature or slightly chilled.

The grapes are harvested by hand and are dried in the sun until they almost become raisins. This gives El Candado its lush sweetness. The sherry then matures for an average of more than 10 years under oxidative aging.

Jerez is the sherry production area of Spain. The region is a triangle of the towns of Jerez de la Frontera, El Puerto de Santa Maria and Sanlucar de Barrameda. Of these, the only authorized grapes are Palomino, Moscatel and Pedro Ximénez. The area has a subtropical climate with mild, wet winters and warm, dry summers.
