Some of the grapes used for this wine are dried, this is called the 'appassimento' method. This is a unique method that is characteristic of the production of wines from the Veneto region. This technique has its roots in the distant past since Roman times. The grapes are dried before pressing.
The necessary experience for drying the grapes for Neropasso is required. To get an excellent wine, the 'appassimento' method is essential. It is a very critical and delicate phase of winemaking.
The grapes must be perfectly ripe and healthy, if they are selected during the manual harvest. The thinnest bunches are chosen, with the grapes not too close together, so that air can circulate. The grapes are placed in large perforated plastic boxes to ensure excellent ventilation. The boxes are stacked in the fruttaio, a large airy room and the grapes are checked periodically so that the appassimento takes place in a perfect way.
This wine is made from Corvinone, Corvina and Cabernet Sauvignon grapes. This wine has an intense ruby red color. Spicy in the bouquet with hints of cherries, black cherries and plum compote. Fine and velvety on the palate, persistent with soft tannins in the aftertaste. This wine is delicious with pasta, white and red meat, fresh and mature cheeses.

With the self-imposed limit of 7,000 entries in February and July, the BWT is the first international wine competition to introduce a limit for quality reasons.
