Valderrama vinegar Don Millan 750ml.
Valderrama completes its range with a sherry vinegar from the Pedro Ximenez grape. This vinegar reaches at least the same high level as the now very well-known series of five varieties and the inimitable Grand Cru olive oil from Valderrama. Millán is the middle name of José Valderrama, the proud owner of the company of the same name.
A remarkable result is obtained by slowly evaporating this Don Millán Vinegar to syrup thickness. If desired, a little sugar can be added, but this is not really necessary. In this way a beautiful basis is obtained for, for example, drawing a line next to a salad or dripping the 'syrup' over the salad. We mention another application: “Adding a spoonful of this 'syrup' to a certain sauce provides the sauce in question with a wonderful deepening of the mouthfeel”.
But the basic use of the Don Millán Vinegar is of course the preparation of various dressings.
This pure sherry vinegar is made from the Palomino grape and matures for a period of 2 years in oak barrels. Three months, before the vinegar leaves the barrel, Valderrama adds approximately 10% Pedro Ximenez wine to these barrels. The Pedro Xeminez wine has a sweet character, which naturally softens the pronounced taste of the Reservé Vinegar. This creates the beautiful 'sweet/sour' balance. Don Millán vinegar is produced under the control of the Appelation Origine of Jerez/Sherry (DO).
