Paul Mas Estate Chardonnay Single Vineyard
This Chardonnay has a bright golden color with straw yellow tones. A very elegant wine on the nose with lots of ripe tropical fruit, pineapple, hazelnuts, the fresh scent of lime blossom and quince. Also a hint of vanilla and toasted bread.
The palette reveals fresh aromas of green and red apples accompanied by dried citrus fruit. The wine is wonderfully fresh, dry yet fruity with a light to medium body. In the aftertaste shades of pineapple, limestone and lime. The wine continues to mature nicely in the bottle. When drunk in the first 3 years, the aromas of tropical fruit will predominate. After that, the mineral and buttery notes will develop more.
Made from 100% Chardonnay from the Nicole vineyard in Montagnac. Destemming the grape, maceration during which there is contact with the skin for 3 hours, pneumatic pressing and racking at 5°C. Then 60% of the must goes into new French wooden barrels, where they ferment for a month at a low temperature (16°C) and age for 4 months. The other 40% is fermented in stainless steel tanks. The batonnage technique was used during the aging process. The wood-aged wine is then blended with the wine from the stainless steel tanks before being bottled.
The history of Domaine Paul Mas begins more than a century ago, when Auguste Mas cultivated 9 hectares of vineyard in the Midi. In 1934, his son Raymond Mas purchased the Domaine de Montredon and in the following years the domain was expanded to more than 120 hectares by his sons Paul and Maxime. Today the Domaine is managed by Paul's two sons: Jean Claude and Michel. The vineyards do not form a continuous block, but are located in several closely spaced, climatically and soil-technically very different zones in the Midi.
