The color is bright, slightly translucent ruby red. The scent is pure and fragrant in intensity. The nose immediately notices red fruit, such as strawberry and raspberry. Then come herbs, such as bay leaf, and spices, such as black pepper. Something floral is also noticeable in the nose. The attack in the mouth is soft, the wine has little acidity and an average alcohol percentage. It is a supple wine with soft tannins. This red wine from La Lastra is balanced with a long aftertaste.
Canaiolo IGT Toscana Rosso from La Lastra goes well with pasta with red sauces of vegetables and meat. Also good to combine with pasta pesto, charcuterie, roasted white meat.
Canaiolo is an ancient indigenous grape variety in Tuscany. In the past mainly used to soften the high acidity in Chianti. 4,870 canes per hectare have been planted at La Lastra and the yield is 3,500 kg per hectare. The grapes are picked by hand and transported to the winery in 15 kg crates. The fermentation takes place for 14 days at a temperature of 26 °C. Maturation took place in stainless steel tanks and in bottles.
